Ingredients

  • 2 boneless skinless chicken breasts, cut into bite-size pieces
  • 1 cup dill pickle juice
  • 1 cup milk + 1 egg
  • 1 cup flour
  • 2 tablespoons powdered sugar
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Peanut or canola oil for frying

Instructions

  1. Brine the chicken pieces in pickle juice for 30 minutes to 1 hour.
  2. Whisk milk and egg in one bowl; combine flour, powdered sugar, and spices in another.
  3. Dip each piece in egg wash, then coat in the seasoned flour.
  4. Fry at 350°F for 3–4 minutes until golden and cooked through (165°F internal).
  5. Drain on a wire rack and serve with your favorite copycat sauce.

Tips

  • Cut pieces evenly so they cook at the same rate.
  • Do not crowd the oil — fry in batches to keep it crisp.
