Ingredients

  • 2 cups elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups whole milk
  • 1 cup shredded cheddar
  • 1/2 cup shredded American cheese
  • 1/4 cup shredded Parmesan
  • 1/4 cup shredded Romano (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni until just shy of al dente, then drain.
  2. Melt butter in a saucepan, whisk in the flour, and cook for 1 minute.
  3. Slowly whisk in the milk and simmer until slightly thickened.
  4. Stir in the cheeses, reserving a handful for the top, until melted and smooth.
  5. Fold in the macaroni, season, and transfer to a baking dish.
  6. Top with the reserved cheese and bake at 375°F for 20–25 minutes until bubbly and golden.

Tips

  • A blend of cheeses gives the signature flavor — do not use cheddar alone.
  • For browned tops like the restaurant, finish under the broiler for 2 minutes.
